Remember Your Health Too This Memorial Day

Finally, the warm weather has arrived, and I hope it’s here to stay. With the warm weather comes long summer evenings on the patio enjoying the bounty spring and summer have to offer. Where I live it isn’t uncommon to receive a phone call with an invitation for a barbeque that evening. Each family brings their favorite dish to share. These are some of our wonderful summer memories, and many of my favorite summer recipes have come from these special evenings. This recipe for green bean salad is one of those recipes, and it’s quick, simple, healthy, low calorie and most importantly really delicious. Bring this colorful salad to your next summer barbeque and wow your friends. Green beans and tomatoes are both a very good source of fiber and vitamins A and C. Tomatoes pack a healthy dose of cancer fighting lycopenes.

 

Green Bean & Grape Tomato Salad with Mustard Vinaigrette

1 lb. string beans

1 c. grape tomatoes, sliced in halfgreen beans and tomato salad on plate

 

Sauce

2 shallots, chopped

20-25 basil leaves

2-3 tbsp. grainy Dijon mustard (not spicy)

2 tsp. sugar

3/4 c. olive oil

Salt & pepper to taste

 

Combine sauce ingredients in food processor, adding olive oil last. Blend until creamy.

Blanche beans, add sliced grape tomatoes, add 2/3 of the sauce to beans and mix. Pour leftover sauce on top.
